Online it will not accept bcoz of validity over a year, your GRO needs to visit Passport office and update it by explaining the issue.

He said he'd requested jawazat to update it online and I have to wait without giving me a clear time frame.
I'll give them 36 hours to get it done otherwise I'd have to get an agent to do it for me.
Would that be seen as breaking the Saudi law or is it legal?

Ok, general rule of thumb is company representative should approach the office.
Yes you can hire an agent but he should be a saudi guy  to visit the office.

My company GRO hasn't replied to my requests to provide an update regarding updating my passport details with Jawazat.

I'm thinking of hiring an agent to solve this issue for me.
Is this against Suadi Law?

No it's not against it is always an option better to do it with your GRO or else tell him to visit the office its 10 minute task.
