Does anybody know of shop in Quito where one can buy baking supplies for pastry & bread (bicarbs, flours, bran, essences etc)?

No they don't.  I am looking for a baking shop who supply ingredients for variety ingredients that is used for baking all sorts.  I did find a small shop but they don't have everything. Where do baker's buy in quantities?

You could try contacting these and ask them, if they don't carry what you want they would probably know where to get it:

On Nunez de Vela, across the street from Mercado Inaquito there is a baking supply store called Cocoa something which is dedicated solely to baking supplies. I am more than certain they will point you in the right direction.

To avoid any confusion, the baking supplies they sell are the non-edible variety, cup cake making thingies, and all that stuff.

Alright, to give a precise location, there's a Korean restaurant on the corner of Nunez de Vela, next to it is a vacant Korean mini-mart, and next to that is the Bakery Supply shop.
